EXPERIMENTAL RESEARCHES ON SOME SPECIES AND VARIETIES OF FRUITS AND VEGETABLES SUBJECTED TO DEHYDRATION TREATMENTS

The main objective of the work is study process dehydration fruits and vegetables, using two different types equipment for dehydration: convective dryer, equipped with drying trays; microwave field instalation, continuous flow. In case divided products will be placed evenly on trays following specific parameters determined: initial final humidity products; air temperature; air. equipment, in a uniform layer conveyor belt, which moves at constant speed 4.5 cm/min. measured: mass sample; amount water evaporated measuring interval; end cycle. results obtained dryer indicate that measured values fall perfectly within admissibility range imposed by technology,regarding all studied parameters. installation microwaves, very intense, producing rapid heating product to over 600 C0, approx. 5 min., its entire volume, leads inactivation oxidative enzymes reduces risk thermal browning caramelization.
